Perfect Paleo Cranberry Sauce

Paleo Cranberry Sauce

Thanksgiving is my jam and every year I have a hard time keeping my excitement contained. All the family + hours in the kitchen together + the very best food + games + perfect weather = PERFECTION. My husband calls me a holiday elf and I'm not arguing with that description.⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Today I wanted to share one of my favorite go-to real food holiday recipes. This cranberry sauce is so deliciously tart - and the rosemary adds the perfect depth to the flavor. I love eating it on just about anything this time of year!⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Cranberry Sauce (For 4, double-triple depending on your crowd size!)⠀⠀⠀⠀⠀⠀⠀⠀⠀

zest of 1/2 lemon⠀⠀⠀⠀⠀⠀⠀⠀⠀
zest of 1 orange⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup honey⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 springs rosemary⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 teaspoon cinnamon⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 teaspoon cardamom⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 teaspoon nutmeg⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup orange juice⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 tablespoon grass fed gelatin⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
DIRECTIONS⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. Pour water in small bowl and sprinkle gelatin on top.⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. In a pan, add all other ingredients and bring to a boil. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Reduce heat to low for about 15 minutes (or until your desired consistency!), and then mix in gelatin water combo. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. Move to the fridge and enjoy once cold!⠀⠀⠀⠀⠀⠀⠀⠀⠀

*I made this in early November and couldn't find organic cranberries. I soaked mine in baking soda for 30 minutes and rinsed very well, which is one of the most effective ways to neutralize pesticides. I highly recommend doing this step if using conventional cranberries!
